Cabernet Merlot

Beef, Mushroom and Cabernet Merlot Casserole
Ingredients
  • 2 rashers bacon - chopped
  • 1 onion - chopped
  • 750g diced beef
  • 2 cloves garlic - crushed
  • 1 tbsp plain flour
  • 1 cup Jane Brook Cabernet Merlot
  • 4 chopped roma tomatos
  • 2 tablespoons tomato paste
  • 2 cups sliced mushrooms
  • 3 - 4 sprigs thyme

Lightly brown onion and bacon in olive oil, add to casserole dish. Using same pan, brown beef and add to casserole dish. Gently fry garlic in same pan, then add flour, red wine, tomato paste and tomatoes to form a sauce. When sauce bubbles and thickens add to casserole dish. Cook at 160 degrees for 30 minutes, then add mushrooms and thyme and cook for a further 30 minutes. Serve with creamy mashed potato and a glass of Jane Brook Cabernet Merlot.
